Ingredients
To make this mouth-watering dish, you will need: 500g of lean beef mince, 2 medium sweet potatoes, 1 onion, 1 garlic clove, 1 red pepper, 1 teaspoon of smoked paprika, 1 teaspoon of cumin, 1 teaspoon of dried oregano, 1 tablespoon of tomato puree, 1 beef stock cube and 1 tablespoon of olive oil.
Instructions
First, preheat the oven to 200°C/400°F/Gas Mark 6. Peel and cube the sweet potatoes, then spread them out on a baking tray. Drizzle with a tablespoon of olive oil and season with salt and pepper. Roast in the oven for 25 minutes.
