Add the carrots, celery, tomato purée, and flour to the pan and cook for 2 minutes. Pour in the stock and add the bay leaves and sugar. Bring the mixture to the boil, reduce the heat and simmer for 10 minutes, or until the vegetables are softened.

Stir in the yoghurt, chicken, red pepper, courgette, and peas. Simmer for 10 minutes, or until the chicken is cooked through. Finally, add the freshly chopped coriander and season to taste.
