  • 1/4 cup boiling water

Instructions

Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 9-inch round cake pan.

In a medium bowl, cream together the 1/2 cup butter and 2/3 cup white sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vinegar and vanilla extract. In a separate bowl, combine the salt, cake flour, all-purpose flour, and baking powder. Gradually add the dry ingredients to the creamed mixture and mix until everything is well blended. Spread the batter into the prepared pan.

In a small bowl, mix together the apricot jam and cream. Pour the mixture over the batter in the pan. In another small bowl, combine the brown sugar, 1/2 cup butter, and boiling water. Pour this mixture over the apricot jam mixture in the pan.

Bake for 40 to 45 minutes, or until a toothpick inserted into the center of the pudding comes out clean. Allow the pudding to cool slightly before serving. Serve warm with a dollop of cream or ice cream.
