Gluten-Free Malva Pudding Recipe

Ingredients
- ¾ cup gluten-free all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- 1 cup white sugar
- ½ cup butter, softened
- 2 eggs
- 1 teaspoon vanilla extract
- ½ cup milk
- ½ cup apricot jam
- For the syrup:
- ½ cup white sugar
- 1 cup hot water
Instructions
Preheat your oven to 350 degrees Fahrenheit. Grease an 8 inch round cake pan and set aside.
In a large bowl, mix together the gluten-free flour, baking powder, cinnamon, and nutmeg. In a separate bowl, cream the butter and sugar together until light and fluffy. Beat in the eggs one at a time until combined. Add the vanilla extract and mix until combined.
Add the dry ingredients to the wet ingredients and mix until just combined. Slowly add the milk and mix until combined. Pour the batter into the prepared pan and spread it evenly.
In a small bowl, mix together the apricot jam and 1 tablespoon of water. Spoon the jam mixture over the top of the batter, spreading it evenly. Bake for 30 minutes or until a toothpick inserted into the center comes out clean.
While the pudding is baking, make the syrup. In a small saucepan over medium heat, bring the sugar and water to a boil. Reduce heat and simmer for 5 minutes, stirring frequently. Remove from heat and let cool slightly.
When the pudding is done baking, remove it from the oven and pour the syrup over the top. Let cool completely before serving. Serve with a dollop of whipped cream or ice cream, if desired.
