  • 3 tablespoons olive oil
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 1 red bell pepper, diced
  • 2 potatoes, diced
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes (optional)
  • 6 cups vegetable broth
  • 1 (14-ounce) can diced tomatoes, with juice
  • 1/2 cup frozen corn
  • 1/2 cup frozen green beans
  • 1/2 cup frozen peas
  • Salt and pepper, to taste

Instructions:


Heat the olive oil in a large pot over medium heat. Add the onion and garlic, and sauté for 3 minutes. Add the carrots, celery, and bell pepper, and sauté for an additional 5 minutes. Add the potatoes, thyme, oregano, basil, and red pepper flakes, and sauté for an additional 3 minutes.


Pour in the vegetable broth, and bring the soup to a boil. Reduce the heat to low, and simmer for 20 minutes, or until the vegetables are tender. Add the tomatoes, corn, green beans, and peas, and simmer for an additional 10 minutes, or until the vegetables are cooked through.


Season with salt and pepper, to taste. Serve hot.

This hearty vegetable soup is low in calories and fat, but high in fiber and protein. One serving provides approximately 140 calories, 6 grams of fat, 16 grams of carbohydrates, 5 grams of fiber, and 6 grams of protein.

Creamy Broccoli Soup

Ingredients:

  • 3 tablespoons butter
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 2 heads broccoli, chopped
  • 1/2 cup heavy cream
  • 1/4 cup Parmesan cheese, grated
  • Salt and pepper, to taste

Instructions:


Heat the butter in a large pot over medium heat. Add the onion and garlic, and sauté for 3 minutes. Pour in the chicken broth, and bring the soup to a boil. Add the broccoli, and simmer for 10 minutes, or until the vegetables are tender.


Puree the soup in a blender or food processor until smooth. Return the soup to the pot, and stir in the heavy cream and Parmesan cheese. Simmer for 5 minutes, or until the soup is heated through. Season with salt and pepper, to taste. Serve hot.

Chicken Noodle Soup

Ingredients:

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 6 cups chicken broth
  • 1 bay leaf
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1/2 pound egg noodles
  • Salt and pepper, to taste

Instructions:


Heat the olive oil in a large pot over medium heat. Add the onion and garlic, and sauté for 3 minutes. Pour in the chicken broth, and bring the soup to a boil. Add the bay leaf, carrots, celery, thyme, oregano, basil, and red pepper flakes, and simmer for 10 minutes, or until the vegetables are tender.


Add the chicken, and simmer for an additional 10 minutes, or until the chicken is cooked through. Add the egg noodles, and simmer for an additional 10 minutes, or until the noodles are cooked through. Season with salt and pepper, to taste. Serve hot.
