  1. Wash the rice in several changes of water and soak for 20 minutes. Drain and keep aside.
  2. In a heavy bottomed pan, heat the oil and add the cumin and mustard seeds. When they crackle, add the turmeric powder, chillies, onion, garlic and ginger. Saute for a few minutes.
  3. Add the cardamoms, bay leaf, garam masala, coriander powder and stir for a few seconds.
  4. Add the coriander and mint leaves and stir again. Add the cooked chicken and salt and stir to combine.
  5. Add the drained rice and mix well. Add the water and bring to a boil. Reduce the heat to low, cover and cook for 15 minutes.
  6. Remove the lid and fluff the rice with a fork. Serve hot.
