  • 1 package of pre-made pie crust
  • 1 egg, beaten (for egg wash)

Instructions

To make these delicious Chicken and Leek Mini Pies, begin by preheating your oven to 375 degrees Fahrenheit. Then, melt the butter in a large skillet over medium heat. Add the chicken and leeks, and cook until the chicken is cooked through and the leeks are softened. Once the chicken and leeks are cooked, add the chicken broth, flour, thyme, marjoram, oregano, garlic powder, salt, and pepper. Stir to combine, and cook for an additional 2-3 minutes until the sauce has thickened. Remove the skillet from the heat and set aside.

Next, line a baking sheet with parchment paper. Unroll the pre-made pie crust, and cut out 12 circles with a biscuit cutter or a small glass. Place 6 of the circles on the baking sheet, and spoon about 2 tablespoons of the chicken and leek filling into the center of each circle. Place the remaining 6 circles on top of the filled circles, and press the edges together with your fingers to seal. Cut three small slits in the top of each pie, and brush with the beaten egg.

Bake the pies in the preheated oven for 20-25 minutes, or until they are golden brown. Let the pies cool before serving.
