Vegetable Soup With Ditalini Pasta

Hearty Vegetable Soup with Ditalini Pasta

Vegetable soup is a simple, tasty and healthy meal that is perfect for lunch or dinner. Whether you’re looking for a light snack or a filling meal, this soup is sure to satisfy. This particular recipe combines a variety of vegetables with ditalini pasta for a hearty and delicious soup.

Ingredients

  • 1/4 cup extra-virgin olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 tablespoons tomato paste
  • 1 (14.5-ounce) can diced tomatoes
  • 6 cups vegetable broth
  • 1/2 cup ditalini pasta
  • 2 cups fresh spinach, chopped
  • 1/4 cup fresh parsley, chopped

Instructions

Heat the oil in a large stockpot over medium heat. Add the onion and cook, stirring occasionally, until softened, about 5 minutes. Add the carrots and celery, and cook for an additional 5 minutes. Add the garlic, oregano, salt, and pepper and stir for 30 seconds. Add the tomato paste and cook for an additional minute. Add the diced tomatoes and broth and bring to a boil. Reduce the heat to a simmer and cook for 10 minutes. Add the ditalini pasta and cook for an additional 10 minutes.

Stir in the spinach and parsley, and cook for an additional 5 minutes. Taste and adjust seasoning, if necessary. Serve warm with a sprinkle of fresh parsley.
