Instructions
Heat the oil in a large stockpot over medium heat. Add the onion and cook, stirring occasionally, until softened, about 5 minutes. Add the carrots and celery, and cook for an additional 5 minutes. Add the garlic, oregano, salt, and pepper and stir for 30 seconds. Add the tomato paste and cook for an additional minute. Add the diced tomatoes and broth and bring to a boil. Reduce the heat to a simmer and cook for 10 minutes. Add the ditalini pasta and cook for an additional 10 minutes.
Stir in the spinach and parsley, and cook for an additional 5 minutes. Taste and adjust seasoning, if necessary. Serve warm with a sprinkle of fresh parsley.
