Instructions
- Heat the oil in a large pot over medium-high heat.
- Add the onions and garlic and cook until softened, about 5 minutes.
- Add the cumin, coriander, turmeric, chili powder, garam masala, cardamom, and cinnamon and cook for 1 minute.
- Add the vegetables and cook for 3 minutes.
- Add the rice and cook for 1 minute.
- Add 2 cups of water and bring to a boil.
- Reduce the heat to low and simmer, covered, for 15 minutes.
- Remove from the heat and let stand, covered, for 10 minutes.
