  • 1/2 teaspoon ground cardamom
  • 1/2 teaspoon ground cinnamon
  • 2 cups mixed vegetables (such as peas, carrots, and bell peppers)
  • 1/2 cup golden raisins
  • 1/2 cup cashew nuts
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped fresh mint leaves
  • Salt and pepper, to taste

Instructions

  1. Heat the oil in a large pot over medium-high heat.
  2. Add the onions and garlic and cook until softened, about 5 minutes.
  3. Add the cumin, coriander, turmeric, chili powder, garam masala, cardamom, and cinnamon and cook for 1 minute.
  4. Add the vegetables and cook for 3 minutes.
  5. Add the rice and cook for 1 minute.
  6. Add 2 cups of water and bring to a boil.
  7. Reduce the heat to low and simmer, covered, for 15 minutes.
  8. Remove from the heat and let stand, covered, for 10 minutes.
  9. Stir in the raisins, cashews, cilantro, and mint.
  10. Season with salt and pepper, to taste.
  11. Serve warm.
