Ingredients
- 500g minced lamb
- 1 onion, finely chopped
- 3 cloves of garlic, minced
- 2 tablespoons of tomato paste
- 1 teaspoon of ground cumin
- 1 teaspoon of ground paprika
- 1 teaspoon of ground coriander
- Salt and pepper, to taste
- 2 tablespoons of olive oil
- 2 tablespoons of butter
- 2 cups of grated cheese
- 6-8 sheets of store-bought filo pastry
Instructions
1. Start by heating the olive oil and butter in a large skillet over medium heat. Add the onion and garlic and sauté until they are softened and fragrant, about 5 minutes.
2. Add the minced lamb to the skillet and cook until the lamb is browned, about 8 minutes. Then add the tomato paste, cumin, paprika, coriander, salt and pepper. Stir to combine and cook for a few minutes until the flavors have blended.
3. Preheat the oven to 375°F. Line a baking sheet with parchment paper and set aside.
4. Lay out one of the sheets of filo pastry and spread a thin layer of the lamb filling on top. Sprinkle with grated cheese and then fold the pastry into a triangle. Continue with the remaining sheets of pastry and filling until all of the filling is used. Place the triangles on the prepared baking sheet and brush with melted butter.
5. Bake the gozleme for 15-20 minutes until the pastry is golden and crisp. Serve hot.
