Instructions

  1. Preheat the oven to 180C/350F/Gas 4.
  2. Grease and line a 900g/2lb loaf tin with baking parchment.
  3. Sift the flour and baking powder into a bowl.
  4. Stir in the sugar.
  5. Make a well in the centre and add the melted butter, eggs, mashed banana and milk (if using).
  6. Mix together until just combined.
  7. Pour the mixture into the prepared loaf tin.
  8. Bake in the oven for 45-50 minutes, or until golden-brown and a skewer inserted into the centre comes out clean.
  9. Leave to cool in the tin for 10 minutes, then turn out onto a wire rack to cool completely.
