Chilli Jam Chicken Stir Fry

Ingredients
- 2 tablespoons of oil
- 700g skinless chicken breasts, cut into cubes
- 2 garlic cloves, minced
- 1 teaspoon of freshly grated ginger
- 1 onion, diced
- 1 red capsicum, diced
- 1/4 cup of Chilli Jam
- 1/4 cup of soy sauce
- 1/4 cup of sweet chilli sauce
- 1/4 cup of water
- 2 cups of cooked white rice
Instructions
Heat the oil in a large wok or fry pan over high heat. Add the chicken and cook for 3-4 minutes, until it is golden. Add the garlic, ginger, onion and capsicum and cook for a further 1-2 minutes.
Add the chilli jam, soy sauce, sweet chilli sauce and water. Reduce the heat to low and simmer for 10 minutes, or until the chicken is cooked through and the sauce has thickened.
Serve the stir fry with cooked rice and enjoy!
