Ingredients
This Chicken and Mushroom Cottage Pie is a delicious, easy-to-prepare dish that is perfect for a weeknight dinner. All you need is 500g of chicken, 1 onion, 200g of mushrooms, 2 cloves of garlic, 2 tablespoons of butter, 400ml of chicken stock, 2 tablespoons of plain flour, 1 teaspoon of dried thyme, 2 tablespoons of Worcestershire sauce, 200g of frozen peas, 2 tablespoons of parsley, 350g of potatoes, 1 egg, and some grated cheese for the topping.
Instructions
Begin by preheating your oven to 180°C/350°F/gas 4. Then, heat a large ovenproof frying pan or casserole dish over a medium heat and melt the butter. Add the diced onion and cook until it begins to soften, then add the garlic, chicken, mushrooms and thyme and cook for a few minutes more. Add the flour and stir until it has absorbed all the butter and the ingredients are coated in a thick paste.
Pour in the chicken stock, Worcestershire sauce and the peas. Bring to a simmer and cook for approximately 10 minutes until the sauce has thickened and the chicken is cooked through. Finally, stir in the parsley and season with salt and pepper.
Transfer the mixture to an ovenproof dish then peel and dice the potatoes, and boil in salted water for 15 minutes or until cooked. Drain the potatoes and mash with a knob of butter, an egg and some grated cheese. Spoon the mashed potatoes over the chicken and mushroom mixture and spread evenly. Use a fork to make ridges in the potatoes and bake in the preheated oven for 25 minutes until golden and bubbling.
