Making this delicious cottage pie from Jamie Oliver is quite easy. All you need are the following ingredients:
- Olive oil
- 2 large onions, finely diced
- 2 cloves garlic, finely chopped
- 2 carrots, peeled and finely diced
- 2 sticks celery, finely diced
- 500g lean minced beef
- 2 tablespoons Worcestershire sauce
- 2 tablespoons tomato purée
- A few sprigs of fresh thyme, leaves picked
- 500ml beef stock
- 2 tablespoons plain flour
- 1 tablespoon English mustard
- 500g potatoes, peeled and cut into chunks
- 25g butter
- 50ml semi-skimmed milk
- 25g Cheddar cheese, grated
- Sea salt and freshly ground black pepper
Instructions:
Making Jamie Oliver’s cottage pie is quite simple. First, preheat the oven to 190°C/gas 5. Heat the olive oil in a large frying pan over a medium heat, add the onions and garlic and fry for 5 minutes until softened. Add the carrots and celery, season with salt and pepper, and fry for a further 5 minutes until softened.
Add the minced beef to the pan, breaking it up with a wooden spoon, and fry for 5 minutes until it is brown. Add the Worcestershire sauce, tomato purée, thyme leaves, and stir for 1 minute, then add the stock and bring to a simmer. Add the flour and mustard, stir, and cook for 1 minute. Transfer the mixture to a large ovenproof dish and level the surface.
To make the potato topping, put the potatoes in a large saucepan, cover with cold water and season with salt. Bring to the boil, then reduce the heat and simmer for 10 minutes until the potatoes are cooked. Drain the potatoes, add the butter and milk, and mash until smooth. Spread the mash over the mince mixture in the ovenproof dish, and top with the grated cheese. Bake in the oven for 35 minutes until golden and bubbling.
