Celeriac Leek And Potato Soup
Celeriac Leek And Potato Soup
Ingredients
This soup is a delightfully creamy and comforting meal that is perfect for cold winter days. To make this soup, you’ll need:
- 2 tablespoons of olive oil
- 2 leeks, sliced
- 2 carrots, diced
- 1 celeriac, peeled and diced
- 3 cloves of garlic, minced
- 1 teaspoon of dried thyme
- 2 potatoes, peeled and diced
- 6 cups of vegetable broth
- 1/2 cup of cream
- Salt and pepper to taste
Instructions
Begin by heating the olive oil in a large soup pot over medium heat. Add the leeks, carrots, celeriac, garlic, and thyme and sauté for 5 minutes, stirring occasionally. Next, add the potatoes and vegetable broth and bring to a boil. Once boiling, reduce the heat to low and simmer for 20 minutes, or until the vegetables are tender. Remove the pot from the heat and let cool for 10 minutes.
Once the soup has cooled, transfer it to a blender or food processor and blend until creamy. You can also use an immersion blender if you prefer. Return the soup to the pot and stir in the cream. Season with salt and pepper to taste. Reheat the soup and serve with crusty bread or a side salad.
Nutrition
This soup is surprisingly nutritious! One serving provides you with a good amount of Vitamin C, Vitamin K, and potassium. It's also an excellent source of dietary fibre, which is important for gut health. Plus, it's low in fat and calories, making it a great option for those watching their weight.
If you're looking for an even healthier version of the soup, you can omit the cream and replace it with a non-dairy alternative such as almond milk or coconut milk. This will reduce the calories and fat content significantly.
This soup is a great way to get your daily dose of vegetables in a delicious and creamy way. Enjoy!
