Ingredients

Instructions
Making the Yorkshire pudding
Preheat the oven to 200°C/400°F/gas mark 6. Place the eggs, milk, flour and salt in a bowl and whisk together until you have a smooth batter. Leave to stand for 30 minutes.
Place the beef in a roasting tin and drizzle over the olive oil, then season with the rosemary, thyme, salt and pepper. Place in the oven and roast for 25 minutes, then reduce the oven temperature to 180°C/350°F/gas mark 4 and roast for a further 1 hour and 30 minutes.
Remove the beef from the oven and increase the oven temperature to 220°C/425°F/gas mark 7. Pour the olive oil into a 12-hole non-stick muffin tin and place in the oven for 5 minutes until it is very hot.
Remove the tin from the oven and quickly pour in the batter. Place in the oven and bake for 25 minutes until the Yorkshire puddings are golden and crisp.
Cooking the roast beef
Place the beef in the roasting tin and drizzle over the olive oil. Rub the rosemary, thyme, salt and pepper all over the beef, then place in the oven and roast for 25 minutes. Reduce the oven temperature to 180°C/350°F/gas mark 4 and roast for a further 1 hour and 30 minutes or until the beef is cooked.
Remove the beef from the oven and leave to rest for 10 minutes before carving. Serve with the Yorkshire pudding and your choice of side dishes.
