Instructions



Begin by preheating the oven to 350 degrees Fahrenheit. Grease a 12-cup muffin tin with cooking spray or butter.

In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. In a separate bowl, whisk together the olive oil, yogurt, cheese, eggs, herbs, and bacon.

Slowly add the wet ingredients to the dry ingredients, stirring until just combined. Do not over mix.

Divide the batter evenly into the prepared muffin tin. Bake for 20 to 25 minutes, or until a toothpick inserted into the center of the muffin comes out clean. Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
