Instructions

2. Add the Arborio rice and stir to coat in the oil. Cook, stirring often, until the rice is lightly toasted and aromatic, about 3 minutes.

3. Pour in the broth and white wine. Bring to a simmer and cook, stirring often, until the rice is tender and the liquid is absorbed, about 25 minutes.

4. Add the shrimp, mussels, and clams to the skillet. Cover and cook until the seafood is cooked through, about 5 minutes.

5. Stir in the butter, Parmesan cheese, and parsley. Taste and adjust the seasoning, if desired. Serve the risotto in warm bowls. Enjoy!
