Ingredients
If you’re looking for an easy, classic cake to make this weekend, then the Mary Berry Lemon Drizzle Cake Recipe BBC is a must-try! This classic British cake is easy to make and requires minimal ingredients. You’ll need: 225g of butter, 225g of caster sugar, 4 eggs, 225g of self-raising flour, 2 lemons, 2 tbsp of milk and some caster sugar for the drizzle.
Instructions
Start by preheating your oven to 170C/Gas Mark 3. Grease and line a 20cm round cake tin with baking parchment. In a large bowl, cream together the butter and the caster sugar until light and fluffy. Gradually beat in the eggs, one at a time, and then fold in the flour.
Zest the lemons and add the zest to the cake mixture. Squeeze the lemons and add the juice to the mixture as well. Stir until everything is combined, then pour the mixture into the prepared cake tin. Place the cake into the oven and bake for 45 minutes, or until a skewer inserted comes out clean.
When the cake is cooked, leave to cool in the tin for a few minutes. Meanwhile, make the drizzle by combining the juice of the remaining lemon with the caster sugar. Once the cake is cool, prick the top of the cake with a skewer and pour the drizzle over the top. Leave to cool completely before serving.
