Ingredients
For the cake:
200g unsalted butter, softened, plus extra for greasing
200g light brown sugar
3 large free-range eggs
200g self-raising flour
2 teaspoons baking powder
50g ground almonds
1 tablespoon instant coffee granules
50ml whole milk
50ml vegetable oil
3 teaspoons vanilla extract
125g walnut pieces
For the icing:
200g unsalted butter, softened
200g icing sugar
2 tablespoons instant coffee granules
50ml whole milk
1 teaspoon vanilla extract
50g walnut pieces, to decorate
Instructions
Preheat your oven to 180°C/350°F/gas 4. Grease and line two 20cm round cake tins with baking parchment.
In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the flour, baking powder and ground almonds.
Stir the instant coffee granules into the milk, then add to the bowl along with the vegetable oil and vanilla extract. Give everything a good mix, then fold in the walnut pieces.
Divide the mixture between the two prepared tins and bake in the preheated oven for 25-30 minutes, or until an inserted skewer comes out clean. Leave the cakes to cool in their tins for 10 minutes, then carefully turn out onto a wire rack to cool completely.
To make the icing, beat together the butter and icing sugar until light and fluffy. Put the coffee granules into a jug with the milk and heat in the microwave for 1 minute, or until hot. Leave to cool for a minute, then add to the icing mixture with the vanilla extract, and beat until combined.
To assemble the cake, put one of the cooled cakes onto a plate or cake stand and spread over half of the icing. Place the second cake on top, then spread over the remaining icing. Decorate with the walnut pieces. Enjoy!
