Spoon the mixture into the prepared tin and spread evenly. Bake in the preheated oven for 45-50 minutes or until a skewer inserted into the centre comes out clean. Leave to cool in the tin for 10 minutes before turning out onto a wire rack.

To make the syrup, put the sugar and lemon juice in a small pan and heat gently, stirring all the time, until the sugar has dissolved. Prick the top of the cake all over with a skewer and pour the warm syrup over the cake. Leave to cool completely before serving.
