  • Lemon wedges, for serving

Instructions

Preheat the oven to 375°F. Heat the olive oil in a large oven-safe skillet over medium heat. Add the garlic and onion and cook until softened, about 5 minutes. Add the bell pepper and chicken and cook until the chicken is lightly browned, about 5 minutes. Add the chicken broth, paprika, saffron, oregano, and rice and stir to combine. Bring to a simmer, cover, and transfer to the oven. Bake for 25 minutes.

Remove the skillet from the oven and add the chorizo. Stir to combine and return to the oven. Bake for an additional 15 minutes, or until the rice is cooked through. Remove from the oven and stir in the peas, parsley, and cilantro. Serve with lemon wedges.
