Ingredients
- 225g/8oz of self-raising flour
- 115g/4oz of caster sugar
- 115g/4oz of butter, softened
- 2 eggs, beaten
- 2 ripe bananas, mashed
- 1 teaspoon of vanilla extract
- 2 tablespoons of semi-skimmed milk
Instructions
Preheat your oven to 180°C/350°F/Gas Mark 4 and grease and line a 900g/2lb loaf tin with baking parchment.
In a large bowl, cream together the butter and sugar until light and fluffy. Add the eggs, one at a time, and beat until fully combined. Stir in the mashed bananas, followed by the vanilla extract and milk.
Sift the flour into the bowl and fold in until fully incorporated. Pour the mixture into the greased loaf tin and bake in the preheated oven for 45 minutes to 1 hour, or until a skewer inserted into the centre of the bread comes out clean.
Allow the banana bread to cool in the tin before slicing and serving.
