Ingredients

  • 2 medium-sized Chinese eggplants, cut into cubes
  • 1 tablespoon vegetable oil
  • 2 cloves garlic, minced
  • 1 teaspoon minced ginger
  • 1/2 pound minced chicken
  • 1 tablespoon oyster sauce
  • 2 tablespoons soy sauce
  • 1/2 teaspoon sugar
  • 1/4 teaspoon white pepper
  • 1 tablespoon cornstarch dissolved in 2 tablespoons water
  • 2 scallions, thinly sliced
  • Salt to taste

Instructions

Heat the vegetable oil in a wok or large skillet over medium-high heat. Add the eggplant cubes and stir-fry for 2 minutes. Add the garlic and ginger and stir-fry for another minute. Add the minced chicken and stir-fry until the chicken is no longer pink. Add the oyster sauce, soy sauce, sugar, and white pepper and stir-fry for another minute.

Add the cornstarch mixture and stir until the sauce thickens. Add the scallions and stir-fry for another minute. Taste and adjust seasonings as needed. Serve hot with steamed rice.
