Ingredients
- 175g/6oz butter, softened

- 85g/3oz caster sugar
Instructions
Begin by preheating your oven to 180°C/350°F/gas mark 4. Grease and line a 2lb/900g loaf tin with baking parchment.
Using a hand-held electric mixer or a stand mixer, cream together the butter and sugar until light and fluffy. Add the eggs one at a time and beat until fully incorporated. Sift in the flour and baking powder then add the lemon zest and milk and mix until everything is combined.
Pour the cake batter into the prepared tin and bake for 40-45 minutes or until a skewer inserted into the center comes out clean. Leave to cool in the tin for 10 minutes before turning out onto a wire rack.
Meanwhile, make the topping by combining the lemon juice and sugar in a small saucepan. Heat over low heat, stirring until the sugar has dissolved. Brush the warm cake with the syrup.
Once the cake has cooled completely, sprinkle with icing sugar and serve.
