Belgian Chocolate Truffle Cake Recipe
Ingredients
For the cake:
- 2 cups all-purpose flour
- 2 cups granulated sugar
- 2 teaspoons baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- 2 eggs
- 1 cup buttermilk
- 1 cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup hot coffee
For the filling:
- 12 ounces semi-sweet chocolate chips
- 1/2 cup heavy cream
- 1/4 cup butter
- 1 teaspoon vanilla extract
Instructions
1. Preheat oven to 350 degrees F and grease two 9-inch round cake pans.
2. In a large bowl, whisk together flour, sugar, cocoa powder, baking soda, baking powder, and salt.
3. In a separate bowl, whisk together eggs, buttermilk, oil, and vanilla extract.
4. Slowly add wet ingredients to dry, mixing until just combined.
5. Pour batter into prepared pans and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
6. Let cakes cool in pans for 10 minutes, then transfer to wire racks to cool completely.
7. To make the filling, place chocolate chips, heavy cream, and butter in a large bowl. Microwave in 30 second intervals, stirring after each, until melted and smooth.
8. Stir in vanilla extract. Let filling cool for about 15 minutes, stirring occasionally.
9. Place one cake layer on a cake stand or serving plate. Spread half of the filling over the top, then top with the second layer. Spread remaining filling over top and sides of cake.
