Beef and Mushroom Risotto Recipe

Ingredients
- ¼ cup olive oil
- 1 yellow onion, diced
- 2 cloves garlic, minced
- 1 pound ground beef
- 8 ounces mushrooms, sliced
- 2 cups Arborio rice
- 4-6 cups beef broth
- 1 cup grated Parmesan cheese
- 2 tablespoons fresh parsley, chopped
- Salt and pepper to taste
Instructions
Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until the onion is translucent, about 5 minutes. Add the ground beef and mushrooms and cook until the beef is browned, about 8 minutes.
Add the Arborio rice and stir to combine. Cook for about 1 minute, stirring constantly. Slowly add the beef broth, 1 cup at a time. Stir constantly until the broth is absorbed before adding more. Continue cooking and adding broth until the rice is cooked through, about 20 minutes.
When the rice is cooked, stir in the Parmesan cheese and parsley. Taste and season with salt and pepper as needed. Serve hot with additional Parmesan cheese, if desired. Enjoy!
