BBC Good Food Aubergine Curry
Aubergine curry is a popular Indian dish, and one of the most popular vegetarian dishes around. This delicious, creamy and fragrant curry is easy to make and perfect for a mid-week dinner or a special occasion. This aubergine curry has a great depth of flavour, thanks to the combination of spices, and is sure to be a hit with family and friends.
Ingredients
- 2 tablespoons vegetable oil
- 1 large onion, chopped
- 2 cloves garlic, crushed
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1 teaspoon ground turmeric
- 1 teaspoon garam masala
- 2 large aubergines, diced
- 400ml can of chopped tomatoes
- 200ml vegetable stock
- 1 tablespoon tomato purée
- 100g Greek-style yoghurt
- Salt and freshly ground black pepper, to taste
- Chopped fresh coriander, to garnish
Instructions
Heat the oil in a large saucepan over a medium heat. Add the chopped onion and garlic and cook for a few minutes until softened. Add the ground coriander, cumin, turmeric and garam masala and cook for a further minute until fragrant.
Add the diced aubergines to the pan and cook for 5 minutes, stirring occasionally. Pour in the chopped tomatoes, vegetable stock and tomato purée and bring to the boil. Reduce the heat and simmer for 15 minutes, stirring occasionally.
Remove the pan from the heat and stir in the Greek-style yoghurt. Season with salt and freshly ground black pepper, to taste. Garnish with chopped fresh coriander and serve with steamed basmati rice or warm naan bread.
