Ingredients
- 3 lb. boneless, skinless chicken breasts
- 1/2 cup pineapple juice
- 1/4 cup soy sauce
- 1/4 cup brown sugar
- 2 cloves garlic, minced
- 1 teaspoon ground ginger
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/4 teaspoon ground black pepper
- 1 (20 ounce) can pineapple chunks, drained
- 6 hamburger buns
- 6 slices of cheese
- 1/4 cup mayonnaise
- 1/4 cup honey mustard
- 1/2 cup diced onion
- 1/2 cup sliced mushrooms
- 1/2 cup diced green peppers
- 1/4 cup diced tomatoes
- 1/4 cup diced pineapple
- 6 lettuce leaves
- 1/2 cup teriyaki sauce
Instructions
Begin by combining the pineapple juice, soy sauce, brown sugar, garlic, ginger, onion powder, garlic powder, and pepper in a large bowl. Stir until all the ingredients are combined. Add the chicken breasts to the marinade and stir to ensure the chicken is evenly coated. Cover and place in the refrigerator for at least 2 hours, or overnight if possible.
When you are ready to cook, preheat the oven to 350 degrees. Line a baking sheet with aluminum foil and spray with non-stick cooking spray. Place the chicken breasts on the foil-lined baking sheet and pour the remaining marinade over the chicken. Bake for about 30 minutes, or until the chicken is cooked through.
Once the chicken is cooked, remove from the oven and set aside. Place the hamburger buns on a baking sheet and top with cheese slices. Place in the oven for a few minutes, or until the cheese is melted.
Meanwhile, in a small bowl, mix together the mayonnaise, honey mustard, onion, mushrooms, green peppers, tomatoes, and pineapple. Spread this mixture over the top of the hamburger buns. Place one lettuce leaf on each bun.
To assemble the burgers, place a cooked chicken breast on top of each bun. Top each chicken breast with a few pineapple chunks and a generous drizzle of teriyaki sauce. Place the top bun on each burger and serve. Enjoy!
