Ingredients

Instructions

To make this Aubergine Curry Bbc Good Food, start by preheating your oven to 200°C. Cut the aubergines into cubes and place them in a roasting tin. Drizzle the vegetable oil over the top, season with salt and pepper and mix everything together. Place in the oven and roast for 25 minutes, or until the aubergines are golden and cooked through.
