Beef Stroganoff
Ingredients:
- 2 tablespoons of olive oil
- 1 onion, finely chopped
- 1 garlic clove, finely chopped
- 1 pound of beef stew meat, cut into cubes
- 1 teaspoon of paprika
- 2 tablespoons of tomato paste
- 1 cup of beef stock
- 1 tablespoon of Worcestershire sauce
- 1 tablespoon of Dijon mustard
- 1 cup of sour cream
- 2 tablespoons of fresh parsley, chopped
- Salt and pepper to taste
Instructions:
- Set the pressure cooker to the “Saute” setting and heat the olive oil. Add the onion and garlic and sauté until they are soft, about 5 minutes.
- Add the beef and paprika and cook until the beef is browned, about 5 minutes.
- Add the tomato paste, beef stock, Worcestershire sauce, and Dijon mustard. Stir to combine.
- Secure the lid and set the pressure cooker to the “High Pressure” setting. Cook for 15 minutes.
- Release the pressure and open the lid. Stir in the sour cream and parsley. Season with salt and pepper to taste.
- Serve over cooked egg noodles or mashed potatoes.

- 1 can of coconut milk
- 1 tablespoon of tomato paste
- 2 tablespoons of fresh cilantro, chopped
- Salt and pepper to taste
Instructions:
- Set the pressure cooker to the “Saute” setting and heat the olive oil. Add the onion and garlic and sauté until they are soft, about 5 minutes.
- Add the ginger, curry powder, turmeric, cumin, coriander, and chili powder. Stir to combine.
- Add the beef and cook until the beef is browned, about 5 minutes.
- Add the coconut milk, tomato paste, and cilantro. Stir to combine.
