Leek And Potato Soup Recipe Instant Pot
When I'm in the mood for something warm and comforting, I turn to my trusty Instant Pot and make this delicious leek and potato soup recipe. It's packed with flavor, and it's so easy to make. Ingredients
- 2 tablespoons of olive oil
- 2 leeks, cleaned and chopped
- 2 cloves of garlic, minced
- 4 medium potatoes, peeled and diced
- 4 cups of vegetable or chicken broth
- 1 teaspoon of dried thyme
- Salt and pepper to taste
- 1/4 cup of heavy cream (optional)
Instructions
1. Set your Instant Pot to Sauté mode. Add the olive oil and heat for a minute or two. Add the leeks and garlic and sauté for a few minutes until the leeks are softened.
2. Add the potatoes, broth, and thyme. Give it a good stir and season with salt and pepper.
3. Close the lid of the Instant Pot and set the valve to sealing. Select the Manual/Pressure Cook mode and set the timer to 5 minutes.
4. When the timer is up, carefully do a quick release of the pressure.
5. Open the lid and stir in the heavy cream, if using. Use an immersion blender to blend the soup until it's creamy and smooth.
