Baked Chicken and Mushroom Risotto

Ingredients

This delicious and nutritious Baked Chicken and Mushroom Risotto requires a few simple ingredients that you may already have in your pantry. You will need: 2 cups of arborio rice, 2 tablespoons of olive oil, 1 large onion, 2 cloves of garlic, 1/2 cup of white wine, 5 cups of chicken stock, 2 cups of diced cooked chicken, 1/2 cup of grated parmesan cheese, 1 cup of sliced mushrooms, 1/2 cup of frozen peas, 1 teaspoon of thyme, 1 teaspoon of sage, 1 teaspoon of oregano, salt and pepper, and fresh parsley for garnish.

Instructions

First, preheat your oven to 350 degrees Fahrenheit. In a large oven-safe skillet, heat the olive oil over medium heat. Add the onion and garlic and cook until the onion is softened and the garlic is fragrant. Add the arborio rice and cook for about two minutes, stirring occasionally. Add the white wine and cook for another two minutes, stirring often. Then, add the chicken stock, one cup at a time, stirring often, until the rice is cooked through. Add the cooked chicken, mushrooms, frozen peas, thyme, sage, oregano and season with salt and pepper. Stir to combine.

Once all the ingredients are combined, transfer the skillet to the preheated oven and bake for 25 minutes. Once the risotto is done baking, remove it from the oven and stir in the grated parmesan cheese. Serve the risotto warm, garnished with fresh parsley, if desired.
