Ackee And Saltfish Egg Roll - A Delicious Jamaican Treat
If you love Jamaican food, then you’re probably already familiar with ackee and saltfish egg roll. It’s a popular dish in Jamaica, with a unique flavor that’s both sweet and savory. The combination of ackee, salted fish, and egg roll makes for a delicious and satisfying snack.
Ingredients
This recipe serves 4 people.
- 1 can of ackee
- 1/2 pound of saltfish
- 4 egg rolls
- 1/2 cup of diced onion
- 1 teaspoon of minced garlic
- 1 teaspoon of minced ginger
- 1 teaspoon of thyme
- 1 teaspoon of allspice
- 1/4 teaspoon of black pepper
- 1/4 cup of vegetable oil
Instructions
Step 1: Preparing the Ackee
First, open the can of ackee and drain off the excess liquid. Then, heat the vegetable oil in a large skillet over medium-high heat. Add the ackee to the skillet and cook for 5-7 minutes, stirring occasionally, until it’s lightly browned and softened. Remove the ackee from the skillet and set aside.
Step 2: Preparing the Saltfish
Next, add the saltfish to the skillet and cook for about 5 minutes, stirring occasionally. Add the onion, garlic, ginger, thyme, allspice, and black pepper to the skillet, and cook for an additional 5 minutes, stirring occasionally. Finally, add the cooked ackee back to the skillet and stir to combine.
Step 3: Assembling the Egg Rolls
Lay out the egg rolls on a flat surface. Place a few spoonfuls of the ackee and saltfish mixture in the center of each egg roll. Fold the ends of the egg rolls in, and then roll them up, tucking in the sides as you go.
Step 4: Cooking the Egg Rolls
Heat a few tablespoons of vegetable oil in a large skillet over medium-high heat. Place the egg rolls in the skillet and cook for 3-5 minutes per side, until they’re golden brown. Transfer the egg rolls to a paper-towel-lined plate to drain off any excess oil.
Step 5: Serving
Serve the egg rolls hot, with your favorite dipping sauce. Enjoy!
