Ingredients
- 250g butter
- 250g caster sugar
- 4 eggs
- 250g self-raising flour
- 250g dried mixed fruit
- 100g glace cherries, chopped
- Grated zest of 1 lemon
- 50g flaked almonds
- 150g almond marzipan
- 2 tablespoons apricot jam
Instructions
Preheat the oven to 160C (fan 140C). Grease and line a 20cm round cake tin.
Start by creaming the butter and sugar together until light and fluffy. Beat in the eggs one at a time, then fold in the flour, mixed fruit, cherries and lemon zest. Spoon the mixture into the prepared tin and level the top.
Roll out the marzipan to fit the top of the cake and brush with the apricot jam. Place the marzipan on top of the cake and press down lightly. Sprinkle with the flaked almonds and bake in the oven for 1 hour 15 minutes, or until a skewer comes out clean.
Leave to cool in the tin for 10 minutes before transferring to a wire rack to cool completely.
