A Delicious BBC Chicken and Leek Pie

Ingredients
- 2 large leeks, finely sliced
- 2 tablespoons of olive oil

Instructions
Firstly, preheat the oven to 180°C/350°F/gas mark 4 and heat the olive oil in a large frying pan over a medium heat. Add the leeks and garlic and cook, stirring occasionally, for 5 minutes or until softened. Add the chicken and cook for a further 5 minutes.
Next, pour in the chicken stock and simmer for 10 minutes. Remove the pan from the heat and stir in the wholegrain mustard and double cream. Season with salt and pepper to taste.
Now, pour the chicken and leek mixture into a 20cm pie dish. Cut the pastry sheet to fit the top of the dish and brush with the beaten egg. Bake in the preheated oven for 25 minutes or until the pastry is golden brown and the filling is bubbling.
