No-Bake Banoffee Pie Recipe
Banoffee Pie is a British classic that has been delighting sweet tooths for generations. It's a simple, no-bake dessert that combines biscuits, cream, bananas, and toffee. - 1 pack of Digestive biscuits (or graham crackers)
- 50g butter, melted
- 397g tin of condensed milk
- 3 tbsp lemon juice
- 200ml double cream
- 2 ripe bananas
- 2 tbsp demerara sugar
Instructions
To make the base of your Banoffee Pie, you will need to crush your Digestive biscuits. Place them in a food processor and pulse until you have created a fine crumb. Alternatively, you can put them in a plastic bag and use a rolling pin to crush them. Once you have the crumb, add it to a bowl and mix it with the melted butter. Use a spoon to mix the two together until you have a wet sand consistency. Once you have the right consistency, press the crumb into a 23cm spring form cake tin. Use the back of the spoon to spread the crumb evenly and press it down firmly. Place the tin in the fridge to set while you make the filling.
To make the filling, you will need to open the tin of condensed milk and pour it into a saucepan. Add the lemon juice and place the pan on a medium heat. Stir the condensed milk regularly until it turns a deep golden brown and thickens. Once you have the right consistency, remove the pan from the heat and leave it to cool for a few minutes. While the condensed milk is cooling, whip the double cream. Use an electric whisk or stand mixer to whip the cream until it forms soft peaks. Once the condensed milk is cool enough to touch, fold it into the cream and mix gently until combined. Pour the mixture into the tin and spread it over the biscuit base using a spatula. Use the back of the spoon to make sure it is evenly spread.
Finally, it's time to assemble the Banoffee Pie. Peel the bananas and slice them into thin rounds. Arrange the banana slices over the top of the cream and sprinkle the demerara sugar over the bananas. Place the pie in the fridge to set for at least two hours before serving.
