Ingredients

The ingredients for this pie are all easy to find in London supermarkets. You will need 500g of diced beef, 2 tablespoons of plain flour, 2 tablespoons of vegetable oil, 2 onions (chopped), 2 cloves of garlic (minced), 250ml of ale, 2 tablespoons of tomato puree, 2 tablespoons of Worcestershire sauce, 1 teaspoon of dried thyme, and some salt and pepper to taste. For the pastry, you will need 500g of plain flour, 250g of cold butter (diced), and 120ml of cold water.

Instructions

To make the filling, heat the oil in a large saucepan over a medium-high heat. Add the beef and brown it for 5 minutes, stirring occasionally. Then add the onions, garlic, flour, ale, tomato puree, Worcestershire sauce, thyme, salt, and pepper. Reduce the heat to low, cover the pan and simmer for 25 minutes. Remove the pan from the heat and allow the mixture to cool.

To make the pastry, sift the flour into a large bowl and add the butter. Rub the butter into the flour with your fingertips until the mixture resembles breadcrumbs. Add the cold water gradually and mix until the pastry forms a ball. Wrap the pastry in cling film and place it in the fridge for 30 minutes.

Preheat the oven to 200°C. Roll out the pastry on a lightly floured surface and use it to line a 23cm pie dish. Spoon the cooled steak and ale mixture into the pastry-lined dish. Roll out the remaining pastry and use it to cover the top of the pie. Trim the edges and crimp the pastry to seal. Make some slits in the top of the pastry and brush it with beaten egg.

Bake the pie in the preheated oven for 35 minutes, or until the pastry is golden brown. Allow it to cool for 10 minutes before serving. Enjoy!
