Ingredients
- 6 large eggs
- 1/4 cup mayonnaise
- 1 teaspoon yellow curry powder
- 1 teaspoon Dijon mustard
- 1/2 teaspoon garlic powder
- 1/4 teaspoon sea salt
- 1/4 teaspoon freshly ground black pepper
- 1/4 cup diced celery
- 1/4 cup diced red onion
- 2 tablespoons chopped fresh parsley
- 2 tablespoons chopped fresh dill
Instructions
1. Place the eggs in a medium saucepan and fill with enough cold water to cover. Bring to a rolling boil over high heat and then reduce the heat to low and simmer for 10 minutes. Remove the pan from the heat and let the eggs sit in the hot water for an additional 10 minutes. Drain the water, then rinse the eggs with cold water until they are cool enough to handle. Peel the eggs and then chop them into small pieces.
2. In a medium bowl, combine the mayonnaise, curry powder, mustard, garlic powder, salt, and pepper. Mix until fully combined. Add in the chopped eggs, celery, onion, parsley, and dill and mix until everything is evenly coated.
3. Place the egg salad in the refrigerator for at least 30 minutes to let the flavors meld. Serve chilled on bread, in a wrap, or as is.
