Mary Berry's Lemon Drizzle Loaf Cake Recipe
Ingredients
This lemon drizzle loaf cake from Mary Berry is a classic recipe that will have your family and friends asking for seconds. To make it, you'll need: 115g of butter, 115g caster sugar, 2 large eggs, 150g self-raising flour, 1 teaspoon baking powder, 2 tablespoons milk, 2-3 drops of lemon extract, 2 tablespoons of freshly squeezed lemon juice, 2 tablespoons of caster sugar, and a pinch of ground nutmeg.
Instructions
Preheat your oven to 350°F (180°C). Grease a 2lb loaf tin with butter and line the bottom of the tin with greaseproof paper. In a medium-sized bowl, cream together the butter and caster sugar until light and fluffy. Beat in the eggs one at a time. Sift in the flour and baking powder and fold into the mixture. Add the milk, lemon extract, and lemon juice, and stir until combined. Pour the cake mixture into the prepared tin, and level the top. Bake in the oven for 30-35 minutes, or until a skewer comes out clean.
Once the cake is cooked, remove from the oven and leave to cool in the tin for 10 minutes. While still in the tin, prick the top of the cake several times with a skewer, then pour over the lemon drizzle. To make the drizzle, combine the caster sugar and nutmeg in a bowl, and add enough lemon juice to make a thick syrup. Drizzle the syrup over the top of the cake and leave to cool completely before serving.
