1/4 cup chopped green onions
Salt, to taste

Instructions

1. Heat the sesame oil in a large skillet over medium heat.
2. Add the garlic and kimchi and cook, stirring occasionally, for 1-2 minutes until fragrant.
3. Add the soy sauce and gochujang and cook, stirring, for another minute.
4. Add the vegetable oil, onion, bell pepper, carrots, mushrooms, zucchini, corn, and peas and cook, stirring occasionally, for 5-7 minutes until vegetables are softened.
5. Add the cooked rice and stir everything together until fully combined. Taste and adjust seasoning with salt, if needed.
6. Add the shredded cheese and stir until melted and fully incorporated.
7. Sprinkle with sesame seeds and green onions and serve.
