Ingredients

For the Batata Vada:

- 4 potatoes, boiled and mashed

- 1 teaspoon coriander powder

- 2 tablespoons chopped coriander leaves

- 2 tablespoons oil

- Salt to taste

For the Batter:

- 1 cup gram flour (besan)

- 1/2 teaspoon turmeric powder

- 1 teaspoon chilli powder

- 1/2 teaspoon baking soda

- Salt to taste

- Water, as needed

- Oil for deep frying

Instructions

1. To make the Batata Vada, heat the oil in a pan and add the cumin seeds. When they splutter, add the green chillies and ginger and sauté for a few seconds. Add the mashed potatoes, coriander powder, salt and lemon juice and mix well. Remove from heat and set aside to cool.

2. To make the batter, mix together the gram flour, turmeric powder, chilli powder, baking soda and salt. Add water little by little and whisk continuously to make a thick batter. The batter should be thick but should be able to coat the potato mixture.

3. Take a small portion of the potato mixture and shape it into a round patty. Dip it in the prepared batter and coat evenly. Heat the oil in a kadai and deep fry the coated potato patties until golden brown.

4. Serve hot with chutney or ketchup and enjoy!
