Ingredients
- 3 cups all-purpose flour
- 2 teaspoons baking powder
- 4 large eggs
- 1 cup (2 sticks) unsalted butter, melted and cooled
- 2 cups granulated sugar
- 1/2 cup buttermilk
- 1 teaspoon pure vanilla extract
- 2/3 cup Nutella
- 1/2 cup chopped Ferrero Rocher pieces
- 1/2 cup heavy cream
- 2 tablespoons light corn syrup
- 6 ounces dark chocolate, chopped
- 12 Ferrero Rocher chocolates, for garnish
Instructions
Making the Cake
Preheat oven to 350°F. Grease and flour two 9-inch round cake pans. In a medium bowl, whisk together the flour and baking powder. In the bowl of a stand mixer, beat the eggs until light and creamy. Add the melted butter and sugar and mix until well combined. Add the buttermilk and vanilla and mix until combined. Add the flour mixture and mix until just combined. Divide the batter between the two prepared cake pans and bake for 25 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool for 10 minutes, then turn out onto a wire rack to cool completely.
Making the Filling
In a medium bowl, combine the Nutella and chopped Ferrero Rocher pieces. Spread half of the mixture onto one of the cooled cake layers. Place the other cake layer on top and spread the remaining Nutella mixture over the top. Place in the freezer for 30 minutes to set.
Making the Ganache
In a small saucepan, bring the heavy cream and corn syrup to a simmer. Remove from heat and add the chopped dark chocolate. Stir until the chocolate has melted and the mixture is smooth. Allow to cool for 10 minutes, then pour over the cake, making sure to cover the sides completely. Place the cake in the refrigerator for 1 hour to allow the ganache to set.
Garnish
Garnish the top of the cake with the Ferrero Rocher chocolates. Serve chilled.
