Beef cottage pie is a classic comfort food dish, and it's an ideal option for a weeknight dinner. The dish is made with ground beef, mixed vegetables, creamy mashed potatoes, and a savory gravy. Ingredients

For the beef mixture:

  • 1 pound of ground beef
  • 1 onion, chopped
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 2 cloves of garlic, minced
  • 1 teaspoon of Worcestershire sauce
  • 1 teaspoon of dried thyme
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 3 tablespoons of all-purpose flour
  • 1 cup of beef broth
  • 1/2 cup of frozen peas

For the mashed potatoes:

  • 4 large potatoes, peeled and cubed
  • 1/4 cup of butter
  • 1/4 cup of milk
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper

Instructions

To make the beef mixture, heat a large skillet over medium-high heat and add in the ground beef. Cook the beef, breaking it up into small pieces as it cooks, until it is no longer pink. Transfer the cooked beef to a plate and set aside.

Add the onion, carrot, celery, and garlic to the skillet and cook, stirring occasionally, until the vegetables are tender, about 5-7 minutes. Add in the Worcestershire sauce, thyme, salt, and pepper, and stir to combine. Sprinkle the flour over the vegetables and stir to combine. Cook for 1 minute, stirring constantly. Add the beef broth and stir to combine. Bring the mixture to a simmer and cook for 2 minutes. Add the cooked beef back to the skillet and stir to combine. Add the frozen peas and stir to combine. Remove the skillet from the heat and set aside.

To make the mashed potatoes, add the potatoes to a large pot and cover with cold water. Bring the water to a boil over high heat, reduce the heat to medium-low and simmer until the potatoes are tender, 15-20 minutes. Drain the potatoes and return them to the pot. Mash the potatoes until they are smooth. Add the butter, milk, salt, and pepper, and mash until combined. Set aside.

Preheat the oven to 350°F. Grease an 8x8 inch baking dish with butter. Spoon the beef mixture into the prepared baking dish. Top with the mashed potatoes, spreading them out evenly. Bake for 25-30 minutes, until the potatoes are lightly golden. Let cool for 10 minutes before serving.
