Instructions
In a large skillet over medium heat, heat the olive oil. Add the onion and garlic and cook, stirring often, until softened, about 5 minutes. Add the mince and cook, stirring occasionally, until the mince is browned, about 5 minutes. Add the carrot, celery, tomato paste, Worcestershire sauce, oregano, pepper, and beef stock. Bring the mixture to a simmer and cook, stirring occasionally, until the liquid is reduced, about 10 minutes.
Once the mixture is cooked, stir in the frozen peas and season to taste with salt and pepper. Transfer the mixture to a 9-inch pie dish. Preheat your oven to 200°C (400°F).
Lay the puff pastry sheet over the top of the pie dish. Cut off any excess pastry and press the edges of the pastry onto the sides of the dish. Brush the top of the pastry with the beaten egg and sprinkle with sesame seeds, if using. Bake for 15-20 minutes, or until the pastry is golden brown.
