Ingredients

For the filling, you will need the following ingredients: 1 onion, 2 cloves of garlic, 500g lean beef mince, 2 tbsp olive oil, 2 tbsp tomato purée, 1 beef stock cube, 2 carrots, 2 celery sticks, 2 bay leaves, 2 tbsp Worcestershire sauce, 2 tsp Dijon mustard, 2 tsp dried herbs, 2 tsp paprika, 2 tsp smoked paprika, 2 tsp dried oregano, 2 tsp ground cumin, 2 tsp sea salt, and freshly ground black pepper.

For the pastry, you will need: 320g puff pastry, 1 egg, and 1 tbsp of milk.

Instructions

Start by heating the olive oil in a large frying pan. Add in the onion, garlic and mince, and cook until the mince is browned. Add in the tomato purée and stock cube, and stir to combine. Add in the carrots, celery, bay leaves, Worcestershire sauce, Dijon mustard, herbs, paprika, smoked paprika, oregano, cumin, salt, and pepper. Stir to combine, then reduce the heat and simmer for 20 minutes, stirring occasionally.

Preheat your oven to 190°C/375°F/gas mark 5. Line a baking tray with baking parchment. Roll out the puff pastry and cut out 12 circles, each about 8cm in diameter. Place the circles onto the prepared baking tray. In a small bowl, beat together the egg and milk. Brush the edges of the pastry circles with the egg wash.

Spoon the mince mixture onto the centre of each pastry circle, and fold over the edges. Brush the tops with the remaining egg wash. Bake in the preheated oven for 20 minutes, or until golden brown.

Serve warm with your favourite sides. Enjoy!
