Instructions
In a large bowl, mix together the flour, salt, and oil. Add just enough water to make a soft, pliable dough. Cover and keep aside for 10 minutes.
In a separate bowl, mix together the mashed potatoes, cumin, coriander, garam masala, chaat masala, chili powder, amchur powder, coriander leaves, mint leaves, and onion.
Divide the dough into 12 equal portions. Take one portion and roll it out into a thin disc. Place 2 tablespoons of the filling in the center of the disc and bring the edges together to cover the filling. Pinch the edges together to seal the filling.
Lightly dust the filled dough with some flour and roll it out into a thin disc. Heat a tawa or griddle on medium heat. Place the paratha on the tawa and cook for a few seconds. Flip it over and brush some oil on the top. Cook again for a few seconds until golden brown spots appear on both sides.
Repeat the same process with the remaining dough. Serve hot with pickles, yogurt, and chutney.
