Chicken And Porcini Mushroom Risotto
Ingredients
This delicious Chicken and Porcini Mushroom Risotto is the perfect meal for entertaining guests or for a cozy night in. It’s also easy to make and doesn’t require too much time or effort. To make this dish, you will need:
- 1/2 cup of uncooked Arborio rice
- 1 tablespoon of olive oil
- 1/2 cup of diced onion
- 1 clove of garlic, minced
- 1/2 cup of white wine
- 2 cups of chicken broth
- 1/2 cup of freshly grated Parmesan cheese
- 1/2 cup of diced cooked chicken
- 1/2 cup of rehydrated porcini mushrooms
- Salt and pepper to taste
- Fresh parsley, for garnish
Instructions
To begin, heat the olive oil in a large saucepan over medium heat. Add the onions and garlic and cook until the onions are soft and translucent. Next, add the Arborio rice and stir to coat with the oil and vegetables. Cook for 1-2 minutes, stirring constantly, and then add the white wine. Cook for an additional 2-3 minutes, until the wine is mostly absorbed.
Next, add the chicken broth, one cup at a time, stirring constantly. Allow the rice to cook for 15-20 minutes, or until the liquid is mostly absorbed and the rice is cooked through. Add the Parmesan cheese, chicken, and porcini mushrooms and stir to combine. Season with salt and pepper to taste.
Serve the risotto with a sprinkle of fresh parsley on top. Enjoy!
