- 1/2 cup of uncooked Arborio rice
- 1 tablespoon of olive oil
- 1/2 cup of diced onion
- 1 clove of garlic, minced
- 1/2 cup of white wine
- 2 cups of chicken broth
- 1/2 cup of freshly grated Parmesan cheese
- 1/2 cup of diced cooked chicken
- 1/2 cup of rehydrated porcini mushrooms
- Salt and pepper to taste

Instructions
To begin, heat the olive oil in a large saucepan over medium heat. Add the onions and garlic and cook until the onions are soft and translucent. Next, add the chicken broth, one cup at a time, stirring constantly. Allow the rice to cook for 15-20 minutes, or until the liquid is mostly absorbed and the rice is cooked through. Add the Parmesan cheese, chicken, and porcini mushrooms and stir to combine. Season with salt and pepper to taste.
