Chicken and Mushroom Pie - Jamie Oliver

- 1 large onion
- 2 cloves of garlic
- 3 tablespoons of olive oil
- 2 skinless, boneless chicken breasts
- 200g chestnut mushrooms
- 2 tablespoons of plain flour

- 150ml of chicken stock
- 1 sheet of ready-rolled puff pastry
- 1 egg
Instructions:
1. Preheat the oven to 200°C/400°F/gas 6. Finely slice the onion and garlic, then heat the oil in a large frying pan on a medium heat. Add the onion and garlic, season with salt and pepper, and fry for 8 minutes, or until softened and golden.
2. Cut the chicken into small cubes and add to the pan. Fry for 6 minutes, or until golden, then add the mushrooms and cook for a further 6 minutes.
3. Sprinkle over the flour and thyme leaves, stir to combine, then pour over the chicken stock. Bring to a simmer and cook for 4-5 minutes, or until the sauce has thickened.
4. Transfer the mixture to an ovenproof dish, then top with the puff pastry and press down the edges. Cut a few slits in the top of the pastry, then brush with beaten egg.
5. Bake for 30-35 minutes, or until the pastry is golden and crisp. Serve with your favorite vegetables.
