BBC Good Food Chicken and Leek Pie
Ingredients
This delicious Chicken and Leek Pie recipe from BBC Good Food is the perfect winter comfort food. You’ll need the following ingredients to make it: 2 tablespoons of oil, 2 large skinless chicken breasts, 2 leeks, roughly chopped, 1 garlic clove, finely chopped, 200ml of dry white wine, 300ml of chicken stock, 2 tablespoons of plain flour, 50g of butter, 1 tablespoon of wholegrain mustard, 350g of ready-rolled puff pastry, 1 beaten egg.
Instructions
To make this delicious pie, heat the oil in a large saucepan over a medium heat and add the chicken. Cook for 10 minutes, until golden and cooked through. Add the leeks and garlic, cook for a further 5 minutes, until softened. Pour in the white wine and chicken stock, bring to the boil and reduce the heat to a simmer. Cook for 15 minutes, until the liquid has reduced by half.
Stir in the flour and butter until combined. Add the mustard and season with salt and pepper. Simmer for 5 minutes, until the mixture has thickened. Spoon the mixture into a 25cm pie dish and allow to cool for 15 minutes.
Roll out the pastry and place over the pie dish. Trim the edges and crimp with the back of a fork. Cut a few slits into the pastry and brush with the beaten egg. Bake in a preheated oven at 200°C for 30 minutes, until golden brown.
